Kuku Paka

Ingredients

  • 1 whole chicken, cut into pieces
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 can (400ml) coconut milk
  • 1 tablespoon lime juice
  • 2 green chilies, slit
  • Salt to taste

Instructions

  1. Heat the oil in a large pan over medium heat.
  2. Add the onions and sauté until golden brown.
  3. Stir in the garlic, ginger, turmeric, and cumin.
  4. Add the chicken pieces and cook until browned on all sides.
  5. Pour in the coconut milk and bring to a simmer.
  6. Stir in the lime juice and green chilies.
  7. Cover and cook for about 30 minutes until the chicken is cooked through.

Notes

  • For added flavor, marinate the chicken in spices overnight.
  • Serve with rice or bread for a complete meal.
