  • 2 cups fresh blueberries
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the milk, vanilla extract, lemon zest, and lemon juice.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Gently fold in the blueberries.
  8. Pour the batter into a greased sheet pan and smooth the top.
  9. Bake for 25-30 minutes or until a toothpick comes out clean.
  10. Allow the cake to cool before serving.

Notes

  • For a sweeter cake, add a glaze made from lemon juice and powdered sugar.
