  • 1 cup granulated sugar
  • 4 large eggs
  • 16 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 tablespoon lemon zest
  • ¼ cup fresh lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, mix graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar, mixing until combined.
  4. Add eggs one at a time, beating well after each addition. Incorporate sour cream, lemon zest, lemon juice, and vanilla extract, mixing until fully combined.
  5. Pour the cheesecake filling over the crust in the springform pan.
  6. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly.
  7. Turn off the oven and leave the cheesecake inside for 1 hour.
  8. Remove from the oven and cool to room temperature before refrigerating for at least 4 hours.
  9. Serve chilled, garnished with lemon slices if desired.
