- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 1 cup wild rice, rinsed
- 2 cups cooked chicken, shredded
- 1 cup broccoli florets
- 1 cup mushrooms, sliced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 teaspoon black pepper
- 1 cup lemon juice (about 2 lemons)
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and cook until softened.
- Add the garlic and cook for another minute until fragrant.
- Pour in the chicken broth and bring the mixture to a boil.
- Stir in the wild rice and reduce heat to a simmer. Cover and cook for 45 minutes.
- Add the cooked chicken, broccoli, mushrooms, thyme, parsley, and black pepper. Continue to simmer for an additional 15 minutes.
- Remove from heat and stir in the lemon juice before serving.
Notes
