Lemon Chicken Wild Rice Soup

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 1 cup wild rice, rinsed
  • 2 cups cooked chicken, shredded
  • 1 cup broccoli florets
  • 1 cup mushrooms, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon black pepper
  • 1 cup lemon juice (about 2 lemons)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and cook until softened.
  2. Add the garlic and cook for another minute until fragrant.
  3. Pour in the chicken broth and bring the mixture to a boil.
  4. Stir in the wild rice and reduce heat to a simmer. Cover and cook for 45 minutes.
  5. Add the cooked chicken, broccoli, mushrooms, thyme, parsley, and black pepper. Continue to simmer for an additional 15 minutes.
  6. Remove from heat and stir in the lemon juice before serving.

Notes

  • For extra creaminess, stir in a splash of heavy cream at the end.
