  • 2 large eggs

  • 1 tbsp lemon zest
  • 1/2 cup crushed graham crackers

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the sugar and butter until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, combine the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with sour cream, mixing until just combined.
  6. Stir in the lemon juice and lemon zest.
  7. Pour the batter into a greased cake pan and sprinkle the crushed graham crackers on top.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Let it cool before serving.
