  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the lemon juice and zest.
  5. In another bowl, combine flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fill each cupcake liner about 2/3 full with batter.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool completely before filling with strawberry.
  10. For the filling, mix the chopped strawberries with a bit of sugar and let it sit for 30 minutes before using.
  11. Once cupcakes are cooled, core a small hole in the center and fill with the strawberry mixture.
