  • 1/4 cup heavy cream
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1/2 cup powdered sugar
  • 1/4 cup crushed graham crackers

Instructions

  1. In a saucepan, heat the heavy cream until just simmering.
  2. Remove from heat and pour in the white chocolate chips, stirring until melted and smooth.
  3. Add lemon juice and lemon zest, mixing well.
  4. Refrigerate the mixture for about 1 hour until firm.
  5. Using a spoon, scoop out small portions and roll into balls.
  6. Roll the truffles in powdered sugar and crushed graham crackers.
  7. Chill again before serving.

Notes

  • For a stronger lemon flavor, add more lemon zest.
