- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 teaspoons curry powder
- 1 teaspoon cumin
- 1 can coconut milk
- 2 cups vegetable broth
- 1 bell pepper, chopped
- 2 cups spinach
- salt to taste
- Heat olive oil in a pot over medium heat.
- Add onion, garlic, and ginger; sauté until softened.
- Stir in curry powder and cumin, cooking for 1 minute.
- Add lentils, bell pepper, coconut milk, and vegetable broth; bring to a simmer.
- Cover and cook for 25-30 minutes until lentils are tender.
- Stir in spinach and cook until wilted.
