Lentil & Rice Vegan Cabbage Rolls

  • 1 cup lentils
  • 1 cup cooked rice
  • 1 large head of cabbage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Prepare the cabbage by boiling it for 5 minutes to soften the leaves.
  2. In a pan, heat olive oil and sauté onion and garlic until translucent.
  3. Add lentils, rice, cumin, paprika, salt, and pepper, mixing well.
  4. Stuff each cabbage leaf with the lentil and rice mixture, folding in the sides.
  5. Place rolls in a baking dish and bake at 350°F for 30 minutes.
