  • 1 cup dried chickpeas
  • 1 teaspoon baking soda
  • 1 cup chopped parsley
  • 1/2 cup chopped onion
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • Olive oil for frying
  • 1 cup cooked quinoa
  • 1 cup diced cucumber
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced

Instructions

  1. Soak the chickpeas in water overnight, then drain and rinse.
  2. In a food processor, combine soaked chickpeas, baking soda, parsley, onion, garlic, cumin, coriander, cayenne, salt, and black pepper. Process until a coarse mixture forms.
  3. Form the mixture into small balls or patties.
  4. Heat olive oil in a pan over medium heat and fry the falafel until golden brown on both sides.
  5. Serve the falafel over a bed of quinoa, topped with cucumber, cherry tomatoes, feta cheese, and olives.
  6. Drizzle with tahini and lemon juice before serving.
