  • 1 pound elbow macaroni
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup salsa
  • 1 cup sour cream
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 bell pepper, diced
  • 1 onion, diced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the elbow macaroni according to package instructions.
  3. In a large skillet, brown the ground beef over medium heat.
  4. Drain the excess fat and stir in taco seasoning, followed by salsa, black beans, corn, bell pepper, and onion.
  5. Combine the cooked macaroni with the beef mixture and mix in sour cream and half of the cheddar cheese.
  6. Transfer to a baking dish and top with the remaining cheddar cheese.
  7. Bake for 25-30 minutes until cheese is melted and bubbly.
