- 1 pound elbow macaroni
- 1 pound ground beef
- 1 packet taco seasoning
- 2 cups shredded cheddar cheese
- 1 cup salsa
- 1 cup sour cream
- 1 cup black beans, drained and rinsed
- 1 cup corn, drained
- 1 bell pepper, diced
- 1 onion, diced
- Preheat the oven to 350°F (175°C).
- Cook the elbow macaroni according to package instructions.
- In a large skillet, brown the ground beef over medium heat.
- Drain the excess fat and stir in taco seasoning, followed by salsa, black beans, corn, bell pepper, and onion.
- Combine the cooked macaroni with the beef mixture and mix in sour cream and half of the cheddar cheese.
