  • 2 pounds chicken thighs
  • 1 large ripe mango, diced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped cilantro for garnish

Instructions

  1. Marinate the chicken with olive oil, garlic, ginger, soy sauce, honey, lime juice, salt, and pepper for at least 30 minutes.
  2. Preheat the grill to medium-high heat.
  3. Grill the chicken for 6-7 minutes per side until fully cooked.
  4. During the last few minutes of grilling, add the diced mango on top of the chicken to heat through.
  5. Remove from the grill and let rest for a few minutes.
