Mapo Chili Mac

Mapo Chili Mac combines the flavors of traditional Mapo Tofu with comforting macaroni and cheese for a unique dish that’s packed with flavor.

Ingredients

  • 8 ounces elbow macaroni
  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 2 tablespoons garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons chili bean paste
  • 1 cup beef broth
  • 1 cup milk
  • 2 cups shredded cheese
  • 2 green onions for garnish

Instructions

  1. Cook the macaroni according to the package directions; drain and set aside.
  2. In a large skillet, heat vegetable oil over medium heat. Add ground beef and cook until browned.
  3. Add garlic and ginger, stirring for about 1 minute until fragrant.
  4. Stir in chili bean paste and mix well.
  5. Add beef broth and milk; bring to a simmer.
  6. Mix in the cooked macaroni and cheese until combined and creamy.
  7. Serve hot, garnished with green onions.

Notes

  • For a spicier version, add more chili bean paste or red pepper flakes.
  • This dish can be made ahead of time and reheated.
