This Mediterranean Pasta Salad adds a refreshing twist to a classic dish, featuring turkey bacon for a delicious spin.

Ingredients

  • 8 ounces whole wheat pasta
  • 4 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup black olives, sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside to cool.
  2. In a skillet, cook turkey bacon until crispy, then crumble it.
  3. In a large bowl, combine cooked pasta, turkey bacon, cherry tomatoes, cucumber, red onion, feta cheese, and black olives.
  4. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and black pepper.
  5. Pour the dressing over the pasta salad and toss to coat evenly.
  6. Chill in the refrigerator for at least 30 minutes before serving.
