  • 2 fillets salmon
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 lemon, juice and zest
  • 1 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix olive oil, garlic, oregano, lemon juice, and zest.
  3. Place salmon on a baking sheet lined with parchment paper.
  4. Brush the salmon with the olive oil mixture.
