Mediterranean Tuna Stuffed Peppers

  • 4 bell peppers
  • 2 cans tuna, drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/4 cup kalamata olives, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix tuna, tomatoes, onion, olives, feta, parsley, olive oil, lemon juice, and oregano.
  4. Stuff each bell pepper with the tuna mixture.
  5. Place the stuffed peppers in a baking dish and cover with foil.
  6. Bake for 25-30 minutes until the peppers are tender.
