  • 2 cups cooked chicken, shredded
  • 1 cup salsa
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 2 cups tortilla chips, crushed
  • 1 cup shredded cheese, cheddar or Mexican blend

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chicken, salsa, black beans, corn, and half of the cheese.
  3. In a greased casserole dish, layer half of the crushed tortilla chips.
  4. Spread the chicken mixture over the chips and top with the remaining tortilla chips.
  5. Sprinkle the rest of the cheese on top.
  6. Bake for 25-30 minutes, until the cheese is bubbly and golden.
  7. Serve hot, garnished with fresh cilantro if desired.

Notes

  • For a spicier version, use a hot salsa.
  • Add more vegetables like bell peppers or zucchini for extra nutrition.
