Mini Cinnamon Sugar Pumpkin Muffins

These Mini Cinnamon Sugar Pumpkin Muffins are the perfect fall treat, combining the rich flavors of pumpkin and warm spices in a delightful bite-sized muffin.

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 cup canned pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup extra granulated sugar for coating
  • 1 teaspoon cinnamon for coating

Instructions

  1. Preheat your oven to 350°F (175°C) and line a mini muffin pan with liners.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In another bowl, mix the pumpkin puree, granulated sugar, vegetable oil, egg, and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fill each muffin liner about 3/4 full with the batter.
  6. Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
  7. While warm, mix the extra sugar and cinnamon in a bowl and roll the muffins in the mixture to coat.
  8. Let cool on a wire rack.

Notes

  • For a sweeter muffin, add chocolate chips to the batter.
  • These muffins can be made a day in advance.
