- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1/2 cup canned pumpkin puree
- 1/2 cup granulated sugar
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup extra granulated sugar for coating
- 1 teaspoon cinnamon for coating
- Preheat your oven to 350°F (175°C) and line a mini muffin pan with liners.
- In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
- In another bowl, mix the pumpkin puree, granulated sugar, vegetable oil, egg, and vanilla until smooth.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Fill each muffin liner about 3/4 full with the batter.
- Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
- While warm, mix the extra sugar and cinnamon in a bowl and roll the muffins in the mixture to coat.
- Let cool on a wire rack.
