Mochi Ice Cream

Mochi ice cream is a delightful Japanese treat combining the chewy texture of mochi with creamy ice cream, perfect for satisfying your sweet tooth.

Ingredients

  • 1 cup sweet rice flour
  • 1/4 cup granulated sugar
  • 1 cup water
  • 1 pint ice cream (any flavor)
  • 1/4 cup cornstarch (for dusting)

Instructions

  1. In a microwave-safe bowl, mix the sweet rice flour and granulated sugar.
  2. Add water and stir until well combined.
  3. Microwave the mixture for about 1 minute, stir, then microwave for another minute.
  4. Take it out, stir again, and microwave for a final 30 seconds until it forms a sticky dough.
  5. Dust a clean surface with cornstarch and transfer the mochi dough onto it.
  6. Let it cool slightly, then divide the dough into small pieces.
  7. Flatten each piece and place a small scoop of ice cream in the center. Fold the mochi over the ice cream and seal it.
  8. Wrap each mochi in plastic wrap and freeze for at least 2 hours.
