Moist Blueberry Zucchini Bread with a Lemon Glaze

Moist and delicious blueberry zucchini bread topped with a refreshing lemon glaze.

  • 1 cup grated zucchini
  • 1 cup blueberries
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix the grated zucchini, sugars, oil, eggs, and vanilla.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. Combine wet and dry ingredients, adding blueberries gently.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes or until a toothpick comes out clean.
  7. Allow to cool before drizzling with lemon glaze made of powdered sugar and lemon juice.

Notes

  • Feel free to add chopped walnuts for extra crunch.
