  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/4 cup poppy seeds
  • 1/2 cup buttermilk
  • 1 lemon, zested and juiced
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, cream the butter and sugar together until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the lemon zest and juice.
  5. In another bowl, combine the flour, baking powder, salt, and poppy seeds.
  6. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • For an extra zesty flavor, add extra lemon zest to the batter.
  • This loaf can be served with a lemon glaze for added sweetness.
