- 1 cup pumpkin puree
- 1/2 cup white chocolate chips
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/2 cup sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1/2 cup vegetable oil
- Preheat the oven to 350°F (175°C).
- In a bowl, mix pumpkin puree, sugars, and eggs until well combined.
- Add vegetable oil and mix until smooth.
- In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients into the wet mixture, stirring until just combined.
- Fold in white chocolate chips.
- Fill muffin cups 3/4 full and bake for 20-25 minutes.
