  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix pumpkin puree, sugars, and eggs until well combined.
  3. Add vegetable oil and mix until smooth.
  4. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients into the wet mixture, stirring until just combined.
  6. Fold in white chocolate chips.
  7. Fill muffin cups 3/4 full and bake for 20-25 minutes.
