  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups grated carrots
  • 1 cup diced apple
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flours, baking soda, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the sugars, oil, and eggs until well combined.
  4. Gradually mix the wet ingredients into the dry ingredients until just combined.
  5. Fold in the carrots, apple, raisins, and walnuts.
  6. Fill the muffin tin with the batter and bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow to cool before serving.
