My Fave Birria Tacos

A satisfying recipe for juicy birria tacos that the whole family will love.

Ingredients

  • 2 pounds beef chuck roast
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon ground cumin
  • 2 dried guajillo chiles
  • 3 garlic cloves
  • 1 onion, chopped
  • 4 cups beef broth
  • 8 small corn tortillas
  • 1 cup chopped cilantro

Instructions

  1. Season the beef with salt, pepper, and cumin.
  2. Soak the guajillo chiles in hot water for 15 minutes.
  3. Blend chiles, garlic, and onion with some broth until smooth.
  4. Combine blended sauce with beef in a slow cooker and add remaining broth.
  5. Cook on low for 8 hours or until tender.
  6. Shred the beef and serve on warmed tortillas topped with cilantro.

Notes

  • For added flavor, marinate the beef overnight.
  • Adjust the spice level by adding more or less chili.
