One Pan Herb Butter Chicken and Zucchini Rice Pilaf

A delicious and easy recipe for making herb butter chicken paired with zucchini rice pilaf, all in one pan.

  • 4 boneless, skinless chicken thighs
  • 2 tablespoons herb butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 medium zucchini, diced
  • 1 cup rice
  • 2 cups chicken broth
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat the herb butter in a large skillet over medium heat.
  2. Season the chicken thighs with garlic powder, onion powder, paprika, salt, and pepper.
  3. Cook the chicken in the skillet until browned, about 5-7 minutes on each side.
  4. Add the diced zucchini to the pan and sauté for a few minutes.
  5. Stir in the rice and chicken broth, bringing to a simmer.
  6. Cover the skillet and reduce to low heat, cooking until the rice is tender and the chicken is cooked through.
