- 1 tablespoon olive oil
- 4 pieces chicken thighs, bone-in and skin-on
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped green bell pepper
- 3 cloves garlic, minced
- 1 cup long grain rice
- 2 cups chicken broth
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 cup sliced okra (optional)
- Heat olive oil in a large skillet over medium heat.
- Season chicken thighs with salt and pepper, then add to the skillet and cook until browned on both sides.
- Remove chicken and set aside. In the same skillet, add onion, celery, bell pepper, and garlic. Sauté until soft.
- Stir in rice, then add chicken broth, paprika, and cayenne. Bring to a boil.
- Return chicken to the skillet, cover, and reduce heat. Simmer until rice is tender, about 20 minutes.
- If using, add okra and cook for an additional 5 minutes.
- Remove from heat and let sit for 5 minutes before serving.
Notes
- For extra flavor, marinate the chicken in Cajun spices for a few hours before cooking.
- Serve with hot sauce on the side for added heat.
