One Skillet Louisiana Style Chicken and Rice

A delicious and comforting one-skillet meal featuring chicken and rice with bold Louisiana flavors.

  • 1 tablespoon olive oil
  • 4 pieces chicken thighs, bone-in and skin-on
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped green bell pepper
  • 3 cloves garlic, minced
  • 1 cup long grain rice
  • 2 cups chicken broth
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 cup sliced okra (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken thighs with salt and pepper, then add to the skillet and cook until browned on both sides.
  3. Remove chicken and set aside. In the same skillet, add onion, celery, bell pepper, and garlic. Sauté until soft.
  4. Stir in rice, then add chicken broth, paprika, and cayenne. Bring to a boil.
  5. Return chicken to the skillet, cover, and reduce heat. Simmer until rice is tender, about 20 minutes.
  6. If using, add okra and cook for an additional 5 minutes.
  7. Remove from heat and let sit for 5 minutes before serving.

Notes

  • For extra flavor, marinate the chicken in Cajun spices for a few hours before cooking.
  • Serve with hot sauce on the side for added heat.
