- 4 fillets salmon
- 4 slices turkey bacon
- 1 cup heavy cream
- 1 cup spinach
- 1/2 cup cherry tomatoes, halved
- 1/4 cup parmesan cheese, grated
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- In a large skillet, cook the turkey bacon over medium heat until crisp. Remove and set aside.
- In the same skillet, add olive oil and garlic; sauté for 1 minute.
- Add in the salmon fillets and cook for about 3-4 minutes on each side until cooked through.
- Pour in the heavy cream, then add the spinach, cherry tomatoes, parmesan, and Italian seasoning. Stir until heated through.
- Crumble the bacon over the top and serve hot.
Notes
- For added flavor, use smoked paprika.
- Feel free to substitute the spinach with kale or arugula.
