A delicious and easy recipe for pancake mini muffins packed with turkey bacon and fruit.

  • 1 cup flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 cup turkey bacon, cooked and chopped
  • 1/2 cup mixed berries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a large bowl, mix together the flour, baking powder, salt, and sugar.
  3. In another bowl, whisk together the milk, egg, and melted butter.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Fold in the turkey bacon and mixed berries.
  6. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 12-15 minutes or until golden brown.
  8. Let cool slightly before removing from the tin.

Notes

  • For extra flavor, you can add a splash of vanilla extract to the wet ingredients.
  • Feel free to substitute any other fruits or cooked meats you like.
