Parmesan Crusted Tilapia with Roasted Red Pepper Sauce

  • 4 tilapia fillets
  • 1 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup all-purpose flour
  • 1/4 cup roasted red peppers, blended
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a shallow bowl, mix the Parmesan cheese and breadcrumbs.
  3. Dredge each tilapia fillet in flour, dip in beaten egg, and coat with the Parmesan breadcrumb mixture.
  4. In a skillet, heat olive oil over medium heat.
  5. Sear the fillets for about 2-3 minutes on each side until golden brown.
  6. Transfer the fillets to a baking sheet and bake for 10 minutes.
  7. While the fish is baking, prepare the Roasted Red Pepper Sauce by blending the roasted red peppers with salt and pepper.
  8. Serve the tilapia with the sauce on top.
