- 4 cups fresh peaches, sliced
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup rolled oats
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the sliced peaches with sugar and vanilla extract.
- In another bowl, combine flour, baking powder, and salt.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Gradually add the flour mixture to the butter mixture, then stir in the oats.
- Press half of the crumb mixture into a greased baking pan.
- Spread the peach mixture over the crumb layer.
- Sprinkle the remaining crumb mixture on top of the peaches.
- Bake for 45-50 minutes or until golden brown.
- Allow to cool before cutting into bars.
