Peach Crumb Bars

A delightful summer dessert made with fresh peaches and a crumbly topping.

  • 4 cups fresh peaches, sliced
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup rolled oats

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the sliced peaches with sugar and vanilla extract.
  3. In another bowl, combine flour, baking powder, and salt.
  4. In a large bowl, cream together the butter and sugar until light and fluffy.
  5. Gradually add the flour mixture to the butter mixture, then stir in the oats.
  6. Press half of the crumb mixture into a greased baking pan.
  7. Spread the peach mixture over the crumb layer.
  8. Sprinkle the remaining crumb mixture on top of the peaches.
  9. Bake for 45-50 minutes or until golden brown.
  10. Allow to cool before cutting into bars.

Notes

  • Serve with whipped cream for added flavor.
  • Can be served warm or cold.
