Ingredients

  • 8 ounces rotini pasta
  • 1 can corn, drained
  • 4 strips turkey bacon, cooked and crumbled
  • 1 red bell pepper, diced
  • 1/2 cup cilantro, chopped
  • 1/2 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • salt to taste

Instructions

  1. Cook the rotini pasta according to package instructions; drain and set aside to cool.
  2. In a large bowl, combine the corn, turkey bacon, red bell pepper, cilantro, and red onion.
  3. Add the cooled pasta to the bowl and mix well.
  4. In a small bowl, whisk together the mayonnaise, lime juice, chili powder, and salt.
  5. Pour the dressing over the pasta salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
