Potato Sausage Soup, Toscana Style

A comforting and hearty potato sausage soup recipe featuring turkey bacon and flavorful seasonings that will warm you up.

Ingredients

  • 4 slices turkey bacon
  • 1 pound potatoes, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes
  • 1 cup kale, chopped
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside, leaving the drippings.
  2. Add the onion, carrots, and garlic to the pot and sauté until softened.
  3. Stir in the diced potatoes, chicken broth, thyme, and red pepper flakes. Bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Add the kale and cannellini beans, cooking until the kale is wilted.
  6. Season with salt and pepper, and crumble the reserved turkey bacon on top before serving.

Notes

  • This soup can be made in advance and tastes even better the next day.
  • Feel free to substitute turkey bacon with regular bacon for a richer flavor.
