  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, combine the granulated sugar, brown sugar, pumpkin puree, oil, eggs, and vanilla. Mix until well blended.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If using, fold in the chopped walnuts.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the maple glaze, whisk together powdered sugar and maple syrup until smooth, then drizzle over the cooled bread.

Notes

  • For a sweeter glaze, you can add more powdered sugar to the maple syrup.
  • Make sure the bread is completely cool before adding the glaze to prevent it from melting away.
