  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup maple syrup
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In another bowl, whisk the granulated sugar, brown sugar, oil, eggs, pumpkin puree, and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  5. In a separate bowl, beat the cream cheese, maple syrup, and powdered sugar until smooth.
  6. Fill muffin cups halfway with batter, add a spoonful of the cream cheese mixture, then top with more batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let them cool in the pan for 10 minutes before transferring to a wire rack.

Notes

  • For a sweeter muffin, add more sugar to the batter.
  • Feel free to add nuts or chocolate chips for added texture.
