  • 1/2 cup brown sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons cream of tartar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together butter, sugar, and brown sugar until smooth.
  3. Beat in the eggs and pumpkin puree.
  4. In another bowl, mix together flour, baking soda, cream of tartar, pumpkin pie spice, and salt.
  5. Gradually add the dry ingredients to the pumpkin mixture.
  6. Drop rounded tablespoons of dough onto ungreased baking sheets.
  7. Bake for 10-12 minutes or until edges are lightly browned.
  8. Let cookies cool on baking sheets for a few minutes before transferring to wire racks.
