  • 1 cup brewed espresso
  • 1/2 cup pumpkin puree
  • 3 tablespoons pumpkin spice
  • 8 ounces mascarpone cheese
  • 3/4 cup heavy cream
  • 1/2 cup sugar
  • 24 ladyfingers
  • 2 tablespoons cocoa powder

Instructions

  1. Prepare the espresso and let it cool.
  2. In a bowl, mix pumpkin puree and pumpkin spice together.
  3. In another bowl, whisk mascarpone cheese, heavy cream, and sugar until smooth.
  4. Dip ladyfingers into the espresso and layer them in a dish.
  5. Spread half of the pumpkin mixture over the ladyfingers.
  6. Add another layer of espresso-dipped ladyfingers.
  7. Top with the remaining pumpkin mixture and refrigerate for at least 4 hours.
  8. Before serving, dust with cocoa powder.
