2 pounds beef chuck roast
1 onion, quartered
4 cloves garlic
3 dried guajillo chilies
3 dried ancho chilies
1 teaspoon cumin
1 teaspoon oregano
4 cups beef broth
12 corn tortillas
2 cups shredded cheese (Mexican blend)
1 lime, cut into wedges
1/2 cup chopped cilantro
Instructions
In a large pot, combine the beef, onion, garlic, and dried chilies with cumin and oregano. Cover with beef broth.
Bring to a boil, then reduce heat and simmer for 3 hours until beef is tender.
Remove the beef, shred it, and set aside. Strain the broth and reserve.
Heat a skillet over medium heat and dip each tortilla into the reserved broth, then place on the skillet.
Add shredded beef and cheese to half of the tortilla, fold, and cook until cheese melts and tortillas are crispy.
Serve with lime wedges and cilantro.
Notes
For extra flavor, marinate the beef in spices overnight.
