Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1/2 cup chopped fresh fruit (e.g., berries, banana)
  • 1/4 cup nuts or seeds (e.g., almonds, chia seeds)
  • 1 tablespoon honey or maple syrup (optional)

Instructions

  1. Rinse the quinoa under cold water.
  2. In a medium saucepan, combine the quinoa, water, and salt. Bring to a boil.
  3. Reduce heat, cover, and simmer for about 15 minutes, or until the water is absorbed.
  4. Remove from heat and let sit covered for 5 minutes.
  5. Fluff the quinoa with a fork and stir in the olive oil.
  6. Top with fresh fruit, nuts or seeds, and drizzle with honey or maple syrup if desired.

Notes

  • This bowl can be made in advance and stored in the refrigerator for easy breakfasts throughout the week.
