  • 1/2 cup unsalted butter, softened
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1/2 cup raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream the softened butter and sugar until light and fluffy.
  3. Add the egg yolk, vanilla extract, and almond extract, mixing until combined.
  4. Gradually add the almond flour and salt, stirring until a dough forms.
  5. Roll the dough into small balls and place them on the prepared baking sheet.
  6. Use your thumb to make an indentation in each ball and fill with raspberry jam.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
