- 2 ripe plantains
- 1 large sweet potato
- 1 cup brown rice
- 2 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- Pepper to taste
- 2 avocados
- ¼ cup fresh cilantro
- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potato, and slice the plantains.
- Toss the sweet potato and plantains in olive oil, cumin, paprika, salt, and pepper.
- Spread the seasoned vegetables on a baking sheet and roast for 25-30 minutes until tender.
