Roasted Tomato Basil Soup

  • 2 pounds ripe tomatoes
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups fresh basil leaves
  • 2 cups vegetable broth
  • 1 tablespoon balsamic vinegar

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the tomatoes in half and place them on a baking sheet.
  3. Add chopped onion and minced garlic to the baking sheet.
  4. Drizzle with olive oil and sprinkle with salt and pepper.
  5. Roast in the oven for 30-40 minutes until the tomatoes are caramelized.
  6. Remove from the oven and let cool slightly.
  7. In a blender, combine the roasted vegetables, basil, vegetable broth, and balsamic vinegar.
  8. Blend until smooth. Adjust seasoning if necessary.
  9. Heat the soup in a pot on the stove over medium heat.
  10. Serve warm, optionally garnished with fresh basil.
