Rotisserie chicken mushroom soup

A warm and comforting dish made with tender rotisserie chicken and fresh mushrooms.

Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 cup sliced mushrooms
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add mushrooms and cook until softened.
  4. Stir in shredded chicken, thyme, salt, and pepper.
  5. Pour in chicken broth and bring to a simmer.
  6. Reduce heat, and stir in heavy cream.
  7. Simmer for an additional 10 minutes. Serve hot.

Notes

  • For added flavor, try adding a splash of white wine.
  • Garnish with fresh parsley before serving.
