  • 1 pound salmon fillet

  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup corn
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place the salmon fillet on a baking sheet. Drizzle with olive oil and sprinkle with chili powder, cumin, garlic powder, and salt.
  3. Bake for 12-15 minutes or until the salmon flakes easily with a fork.
  4. In a bowl, combine cooked quinoa, avocado, cherry tomatoes, corn, and cilantro. Squeeze lime juice over the top and mix well.
  5. Once the salmon is cooked, flake it into pieces and add it to the quinoa mixture. Stir to combine.
