Samoas Cupcakes Recipe

  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 can sweetened condensed milk
  • 2 cups shredded coconut, toasted
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, combine flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Divide the batter evenly among the cupcake liners.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let the cupcakes cool completely.
  9. Once cool, fill the center of each cupcake with sweetened condensed milk and sprinkle toasted coconut on top.
  10. Dunk the tops of the cupcakes in melted chocolate to finish.

Notes
