  • 1 cup cooked rice
  • 1 cup shredded cheese
  • 1 can black beans, drained and rinsed
  • 1 tablespoon taco seasoning
  • 4 large flour tortillas
  • 1/2 cup salsa
  • 1 tablespoon olive oil

Instructions

  1. In a skillet, heat the olive oil over medium heat. Add the ground chicken and cook until browned.
  2. Stir in the cooked rice, black beans, taco seasoning, and half of the cheese. Mix well.
  3. Warm the tortillas in a separate skillet, then spoon the chicken and rice mixture onto each tortilla.
  4. Top with salsa and the remaining cheese.
  5. Roll up the tortillas, place them seam-side down in a baking dish, and bake at 350°F for 15 minutes.
