Short Rib And Chorizo Chili

A delicious blend of short ribs and chorizo, perfect for a cozy meal.

Ingredients

  • 2 pounds short ribs
  • 1 pound chorizo
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cans diced tomatoes
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed

Instructions

  1. In a large pot, brown the short ribs on all sides.
  2. Add the chorizo and cook until browned.
  3. Remove the meat and sauté onions and garlic until translucent.
  4. Add the diced tomatoes, beef broth, chili powder, cumin, smoked paprika, salt, and pepper.
  5. Return the short ribs and chorizo to the pot and bring to a simmer.
  6. Cover and cook for at least 2 hours on low heat.
  7. During the last 30 minutes, add the kidney beans and black beans.
  8. Serve hot and enjoy!

Notes

  • Let the chili cool completely before storing.
  • For best flavor, make it a day ahead of time.
