- 2 pounds short ribs
- 1 pound chorizo
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 cans diced tomatoes
- 2 cups beef broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt to taste
- Black pepper to taste
- 1 can kidney beans, drained and rinsed
- 1 can black beans, drained and rinsed
- In a large pot, brown the short ribs on all sides.
- Add the chorizo and cook until browned.
- Remove the meat and sauté onions and garlic until translucent.
- Add the diced tomatoes, beef broth, chili powder, cumin, smoked paprika, salt, and pepper.
- Return the short ribs and chorizo to the pot and bring to a simmer.
- Cover and cook for at least 2 hours on low heat.
- During the last 30 minutes, add the kidney beans and black beans.
- Serve hot and enjoy!
