1 cup dried red beans
4 slices turkey bacon
1 medium onion, chopped
2 celery stalks, chopped
1 green bell pepper, chopped
4 cloves garlic, minced
4 cups chicken broth
1 teaspoon Cajun seasoning
1/2 teaspoon black pepper
1 tablespoon olive oil
2 cups cooked rice
Instructions
Rinse and soak the red beans overnight.
In a skillet, cook the turkey bacon until crispy, then chop it.
In the slow cooker, add soaked beans, chopped turkey bacon, onion, celery, green bell pepper, garlic, chicken broth, Cajun seasoning, and black pepper.
Stir well and cook on low for 6-8 hours.
Serve the bean mixture over cooked rice.
Notes
For extra heat, add cayenne pepper to taste.
Garnish with green onions or parsley if desired.
