- 1 cup dried red beans
- 4 slices turkey bacon, diced
- 1 onion, chopped
- 2 celery stalks, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tablespoon Cajun seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup rice
- In the slow cooker, combine red beans, turkey bacon, onion, celery, bell pepper, and garlic.
- Add chicken broth, Cajun seasoning, salt, and pepper; stir well.
- Cover and cook on low for 6-8 hours or until beans are tender.
- In the last hour of cooking, stir in the rice.
