Slow Cooker Cajun Red Beans and Rice

  • 1 cup dried red beans
  • 4 slices turkey bacon, diced
  • 1 onion, chopped
  • 2 celery stalks, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup rice

Instructions

  1. In the slow cooker, combine red beans, turkey bacon, onion, celery, bell pepper, and garlic.
  2. Add chicken broth, Cajun seasoning, salt, and pepper; stir well.
  3. Cover and cook on low for 6-8 hours or until beans are tender.
  4. In the last hour of cooking, stir in the rice.
  5. Serve warm with additional seasoning as desired.

Notes

  • For a vegetarian version, omit turkey bacon and use vegetable broth.
  • Feel free to add cayenne pepper for extra heat.
