- 2 pounds chicken thighs
- 4 cups chicken broth
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 medium onion, chopped
- 2 cups refrigerated biscuit dough
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- Place the chicken, broth, carrots, celery, onion, salt, pepper, garlic powder, and thyme into the slow cooker.
- Cook on low for 6-8 hours until the chicken is tender.
- Remove the chicken and shred it, then return it to the slow cooker.
- Cut the biscuit dough into quarters and add to the slow cooker.
- Cook for an additional 30 minutes until the dumplings are cooked through.
