Slow Cooker Chicken and Dumplings

Ingredients

  • 2 pounds chicken thighs
  • 4 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 medium onion, chopped
  • 2 cups refrigerated biscuit dough
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme

Instructions

  1. Place the chicken, broth, carrots, celery, onion, salt, pepper, garlic powder, and thyme into the slow cooker.
  2. Cook on low for 6-8 hours until the chicken is tender.
  3. Remove the chicken and shred it, then return it to the slow cooker.
  4. Cut the biscuit dough into quarters and add to the slow cooker.
  5. Cook for an additional 30 minutes until the dumplings are cooked through.

Notes

  • For extra flavor, sauté the vegetables before adding to the slow cooker.
