  • 4 cups chicken broth
  • 3 large carrots, chopped
  • 3 medium potatoes, diced
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Place chicken thighs in the slow cooker.
  2. Add the chicken broth, carrots, potatoes, onion, and garlic.
  3. Season with thyme, rosemary, salt, and pepper.
  4. Cover and cook on low for 6-8 hours or until the chicken is tender.

Notes

  • For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the stew during the last hour of cooking.
